Tom’s Chickpea Curry

  • 1 Tbsp Oil
  • 1 Tbsp Garlic, Chopped
  • 1 Tbsp Ginger, Chopped
  • 1 Medium Onion, Chopped
  • 1 Can Tomatoes, Chopped
  • 1 Vegetable Stockcube
  • 1 Can Chickpeas
  • 1 Tsp Garam Masala
  • Coriander, Chopped
  • Salt
  • 1/2 Tsp Chilli Powder
  • Naan Bread – having naans rather than rice reduces the impact of this meal by nearly 1 kg of CO2
  1. In a saucepan saute the ginger, garlic in oil. Add the onions and cook until they are translucent
  2. Add the chopped tomatoes, stock cube and chickpeas.
  3. Add in the chilli powder and garam masala. Simmer for 5 minutes
  4. Season with salt and garnish with fresh coriander
  5. Serve with naan bread
