- 1 Tbsp Oil
- 1 Tbsp Garlic, Chopped
- 1 Tbsp Ginger, Chopped
- 1 Medium Onion, Chopped
- 1 Can Tomatoes, Chopped
- 1 Vegetable Stockcube
- 1 Can Chickpeas
- 1 Tsp Garam Masala
- Coriander, Chopped
- Salt
- 1/2 Tsp Chilli Powder
- Naan Bread – having naans rather than rice reduces the impact of this meal by nearly 1 kg of CO2
Method
- In a saucepan saute the ginger, garlic in oil. Add the onions and cook until they are translucent
- Add the chopped tomatoes, stock cube and chickpeas.
- Add in the chilli powder and garam masala. Simmer for 5 minutes
- Season with salt and garnish with fresh coriander
- Serve with naan bread
