Ratatouille

  • 3 Tbsp Oil
  • 1 Tsp Garlic, Finely Sliced
  • 2 Medium Red Onions, Sliced
  • 2 Aubergines, Sliced
  • 2 Courgettes, Sliced
  • 3 Red or Yellow Peppers, Sliced
  • 6 Ripe Tomatoes, Chopped
  • 1 Can of Plum Tomatoes
  • 1/2 Lemon Zest
  • Parsley, Chopped
  • Salt
  • Pepper
  1. In a large saucepan, fry the aubergines, courgettes and peppers in small batches until they are golden brown. Transfer the cooked veg to a bowl.
  2. In the pan saute the garlic, parsley and onion for 6-7 minutes. Return the vegetable mixture to the pan and pour in the fresh and canned tomatoes. Season with salt and pepper
  3. Simmer for 25 minutes, stirring occasionally
  4. Finely grate in the lemon zest and serve garnished with parsley
