- 3 Tbsp Oil
- 1 Tsp Garlic, Finely Sliced
- 2 Medium Red Onions, Sliced
- 2 Aubergines, Sliced
- 2 Courgettes, Sliced
- 3 Red or Yellow Peppers, Sliced
- 6 Ripe Tomatoes, Chopped
- 1 Can of Plum Tomatoes
- 1/2 Lemon Zest
- Parsley, Chopped
- Salt
- Pepper
Method
- In a large saucepan, fry the aubergines, courgettes and peppers in small batches until they are golden brown. Transfer the cooked veg to a bowl.
- In the pan saute the garlic, parsley and onion for 6-7 minutes. Return the vegetable mixture to the pan and pour in the fresh and canned tomatoes. Season with salt and pepper
- Simmer for 25 minutes, stirring occasionally
- Finely grate in the lemon zest and serve garnished with parsley
