Hiloni’s Signature Burrito

  • 1 Tbsp Vegetable Oil
  • 3 Cloves Garlic, Chopped
  • 1 Onion, Sliced
  • 2 Cup Cooked Rice
  • 1 Can Black Beans – Using beans rather than beef mince cuts the emissions of this dish twelvefold
  • 1 Tsp Chilli Powder
  • 3/4 Cup Salsa
  • 1 Tbsp Coriander, Chopped
  • 1 Tbsp Lime Juice
  • 1 Tsp Cumin Powder
  • Salt
  • 4 Flour Tortillas
  1. Mix together the rice along with lemon juice and coriander. Heat the rice
  2. In a saucepan, saute the garlic and onion for 2 minutes or until the onion is soft.
  3. Pour in the black beans and add the cumin powder, chilli powder and season with salt
  4. Assemble the burrito by spooning the rice on top of the tortilla. Transfer the bean mixture and top with salsa.
  5. Transfer to a sandwich press for one minute if desired
