- 1 Tbsp Vegetable Oil
- 3 Cloves Garlic, Chopped
- 1 Onion, Sliced
- 2 Cup Cooked Rice
- 1 Can Black Beans – Using beans rather than beef mince cuts the emissions of this dish twelvefold
- 1 Tsp Chilli Powder
- 3/4 Cup Salsa
- 1 Tbsp Coriander, Chopped
- 1 Tbsp Lime Juice
- 1 Tsp Cumin Powder
- Salt
- 4 Flour Tortillas
Method
- Mix together the rice along with lemon juice and coriander. Heat the rice
- In a saucepan, saute the garlic and onion for 2 minutes or until the onion is soft.
- Pour in the black beans and add the cumin powder, chilli powder and season with salt
- Assemble the burrito by spooning the rice on top of the tortilla. Transfer the bean mixture and top with salsa.
- Transfer to a sandwich press for one minute if desired
