Hiloni’s Lazy Lentil Dahl

  • 1 Tbsp Vegetable Oil
  • 1/2 Tsp Cumin
  • 1 Tbsp Garlic
  • 1 Small Onion
  • 1 Can Tomatoes, Chopped
  • 1/2 Red Pepper
  • 3/4 Cup Red Lentils
  • 1 15 Ounce Can Coconut Milk
  • 1/2 Tsp Turmeric Powder
  • 1/2 Tsp Chilli Powder
  • Salt
  • Naan Bread – naans are three times less carbon than rice
  1. Soak the lentils for twenty minutes in cold water
  2. Heat oil in a large pot and add the cumin. Cook it until it changes colour.
  3. Add the garlic. Stir in the onion and cook for two minutes
  4. Add the peppers and cook till soft. Pour in the chopped tomatoes, spices and water
  5. Add the lentils, cover the pot and cook for fifteen minutes or until the lentils are cooked
  6. Pour in the coconut milk and simmer for three minutes. Season with salt
  7. Serve with naan bread
