- 1 Tbsp Vegetable Oil
- 1/2 Tsp Cumin
- 1 Tbsp Garlic
- 1 Small Onion
- 1 Can Tomatoes, Chopped
- 1/2 Red Pepper
- 3/4 Cup Red Lentils
- 1 15 Ounce Can Coconut Milk
- 1/2 Tsp Turmeric Powder
- 1/2 Tsp Chilli Powder
- Salt
- Naan Bread – naans are three times less carbon than rice
Method
- Soak the lentils for twenty minutes in cold water
- Heat oil in a large pot and add the cumin. Cook it until it changes colour.
- Add the garlic. Stir in the onion and cook for two minutes
- Add the peppers and cook till soft. Pour in the chopped tomatoes, spices and water
- Add the lentils, cover the pot and cook for fifteen minutes or until the lentils are cooked
- Pour in the coconut milk and simmer for three minutes. Season with salt
- Serve with naan bread
